  • Reduce the heat to low and allow it to turn golden brown slowly, approximately 12–14 minutes, or until it emits a nutty aroma without burning. Regularly and gently scrape the bottom of the pan with a wooden spatula to prevent the solids from sticking and burning.
  • Watch it closely when the butter is almost done to prevent it from overcooking.
  • Immediately pour the browned butter into a bowl once done to prevent further browning in the pan and avoid it becoming burnt rather than browned.

Asparagus

  • Bring water seasoned with salt to a boil in a sauté pan.
  • Cook asparagus over low heat, covered, for about 4 minutes.
  • Drain the water and allow the asparagus to drain in a colander.

For Serving

  • Mash salad cheese with a fork.
  • Arrange the warm asparagus on 4 plates and pour over the browned butter (including the browned solids, which are the most flavourful).
