Vegetable Soup

A quick recipe for a nice, warming soup made with leeks. This vegetable soup with cheese bread is a dish with a delicious full-bodied taste.

Ingredients

Butter
25 g
Bag Of Frozen vegetable (About 500g)

Vegetable bouillon
500 ml
Milk
500 ml
Leek (Sliced Into Thin Rings)

Coarse salt
1½ tsp
Freshly pepper
Baguettes (2cm Thick)
4 slices
Cheese
4 slices
Butter
10 g

Instructions

Step 1

  • Melt the butter in a pot. Add the frozen vegetables and heat it for 1 minute. Pour stock and milk and bring the soup to a boil.

Step 2

  • Boil it on a low heat with a lid for approximately 10 minutes. Scoop out the vegetables and put them into a blender with a little of the soup liquid and blitz 2-3 times.

Step 3

  • Pour the blended liquid back into the pan and add the leeks. Heat for 1 minute. Serve the soup into bowls. Season with salt and freshly ground pepper to taste.

Step 4

  • Cut the baguette into 4 slices about 2cm thick. Place a cheese slice on each slice of bread and place on a baking tray.

Step 5

  • Brush the bread and cheese with butter place onto the top shelf in the oven and cook for 5 minutes at 250 ° until the cheese is melted.
