Vegetable Couscous

This vegetable couscous is fresh and quick to make. It can be eaten on its own or used as a side dish for vegetarian, meat or fish meals.

Instructions

Step 1
  • Slice the fennel. Cut the peppers into small pieces.
Step 2
  • Fry the vegetables lightly together with butter in a large frying pan.
Step 3
  • Pour the tomato juice into a saucepan and bring to the boil, crumble in the stock cube and garlic.
Step 4
  • Remove the pan from the heat. Add the couscous in to the tomato sauce and mix together.
Step 5
  • Let it sit for about 5 minutes with a lid or cover. Remove the lid and fluff the couscous with a fork.
Step 6
  • Crumble the feta or salad cheese into the pan and mix into the couscous.
Step 7
  • Add and mix in the olives. Serve with yogurt.
