Here, we have chosen to pair the ice cream with a slightly tart fruit and a crunchy element, resulting in a combination perfect for late summer and early autumn, when ripe plums are queuing up. The plums taste great with homemade vanilla ice cream, and our buckwheat brittle is a welcome and delicious innovation that works wonderfully as a crispy topping to vanilla-flavoured ice cream.

Ingredients

Vanilla ice cream

Double cream
½ l
Egg yolks

Sugar (approx. ¾ dl)

Vanilla pod - seeds

Baked plums:

Apple juice
200 ml
Sugar
3 tbsp
Plums, cut in halves
300 g

Buckwheat brittle:

Sugar
3 tbsp
Whole buckwheat
100 g

Instructions

Vanilla ice cream:

  • Whip cream until light and fluffy.
  • Whisk egg yolks, sugar, and vanilla seeds until light and all sugar has dissolved.
  • Gently fold the whipped cream into the egg mix.
  • Pour the ice cream into 6 moulds (each about 150 ml) and place them in the freezer, covered.

Baked plums:

  • Preheat oven to 175°C regular oven.
  • Bring apple juice and sugar to a boil and cook for about 15 minutes on medium heat – or until it is a thick syrup.
  • Stir in plums and place the plums with the syrup in a small baking dish.
  • Bake the plums for approx. 10 minutes until they are tender but still have bite. Let cool.

Buckwheat brittle:

  • Spread sugar in an even layer in a cold pan (about 21 cm in diameter).
  • Let the sugar melt without stirring – first for 2 minutes on high heat, then on medium heat.
  • Add the buckwheat kernels and pour the mixture out in a thin layer on a piece of baking paper.
  • Break the brittle into smaller pieces when cool and serve with vanilla ice cream and baked plums.

Tips

If you do not have small moulds in your kitchen, you can also use a bigger mould (approx. 1 litre) to create a wonderful vanilla ice cream dessert. You should still follow the recipe but remember to stir the ice cream 4-5 times during freezing.
