Ingredients

Tart base

Soft butter
125 g
Marzipan
100 g
Sugar
75 g
Lemon (unwaxed), grated zest

Eggs

Wheat flour

Baking powder

Coarse salt (approx.)

Dark chocolate (chips or coarsely chopped)

Cream

Double cream
250 ml
Freshly squeezed lemon juice
1 tbsp
Icing sugar
3 tsp
Vanilla sugar, or seeds from ½ vanilla pod
1 tsp
Fresh strawberries
500 g

Chocolate flakes and garnish

Dark chocolate, light chocolate, or ruby

Freeze-dried raspberries, strawberries, sprinkles, or flowers
1 tbsp
Coarsely chopped unsalted pistachios (can be omitted)

Instructions

Tart base

  • Preheat oven to 200° C (conventional oven).
  • Beat butter, marzipan, sugar, and lemon zest well with a hand mixer for about 3 minutes. Add eggs one at a time, beating between each one.
  • Add flour, baking powder, salt, and milk to the batter and whisk until smooth.
  • Divide the batter into 8-12 muffin moulds (depending on size) and bake in the middle of the oven for 15-20 minutes.
  • Remove the cakes from the oven and spread chocolate on top.
  • Let the chocolate warm up for a few minutes and use a teaspoon to spread it all over the top of the cake.
  • Leave the cakes to cool on a baking tray.

Cream

  • Whip cream, lemon, sugar, and vanilla sugar to a firm foam.
  • Pour the whipped cream into a piping bag.

Chocolate flakes and decorations

  • Melt chocolate in a small bowl or cup in the microwave for about 20 seconds.
  • Stir until the chocolate is completely melted.
  • Spread the chocolate on a piece of baking paper. Use a spatula to pull through the chocolate to form a flat, thin sheet, about 10 x 30 cm.
  • Sprinkle with freeze-dried berries, nuts, or sprinkles.
  • Leave the chocolate to harden (in the fridge if you need to do it quickly or if it is very hot).
  • Use a pizza cutter or knife to cut the chocolate into smaller pieces.

To assemble

  • Pipe whipped cream onto the cakes, add strawberries cut into quarters, and decorate with chocolate flakes.
  • Sprinkle with a few extra pistachios if you like.
