Roasted Herb Aubergine

A simple vegetarian dish with a deliciously rich filling.

Instructions

Step 1

Heat the oven to 200ᵒ.

Step 2

Cut the aubergines in half lengthways, scoring the cut surfaces and place them on a baking tray with baking paper.

Step 3

Pour the oil from the cheese but save 3 tbsp. Brush the aubergines with the oil and sprinkle with salt. Cook in the middle of the oven for about 20 minutes.

Step 4

Allow to cool slightly. Roughly chop the basil and cheese. Peel and finely chop the garlic. Mix them together and distribute the filling between the aubergine halves. Serve with salad.
