Rhubarb Jam

Try this easy and quick recipe for a lovely Nordic-inspired rhubarb jam. It's delicious!

Instructions

Step 1
  • Sterilise some small jars.
Step 2
  • Clean and cut the rhubarb into chunks of approximately 2-3 cm.
Step 3
  • Cut the vanilla pod lengthways and scrape out the seeds.
Step 4
  • Put the rhubarb into a large saucepan with the water, vanilla pod & seeds plus the sugar. Heat up the jam mixture for 10-15 minutes depending on the consistency you like.
Step 5
  • Remove the pan from the heat and let the contents cool slightly. Pour the jam into the sterilised jars and close them. Refrigerate.

Tips

This jam is delicious served with homemade bread or freshly baked rolls. It's perfect for breakfast or brunch - delicious and additive-free! It will keep for up to two weeks in the fridge.
