Rhubarb and Strawberries with White Chocolate and Cardamom

This is a fabulous dessert - rhubarb topped with a sweet chocolate sauce and strawberries; balancing the flavours of the rhubarb and strawberries perfectly!

Ingredients

Rhubarb
200 g
Strawberries
200 g
Cane sugar
3 tbsp
Finely Shredded fresh mint
1 tbsp
Semi-skimmed milk
100 ml
White chocolate
100 g
Creme fraiche
50 ml
Ground cardamom
1 tsp

Instructions

Step 1

  • Peel the rhubarb and cut it into 1 cm pieces, sprinkle with sugar and mint and stir. Leave to marinate for at least 15 minutes. Hull and halve the strawberries and mix with the rhubarb.

Step 2

  • Finely chop the chocolate. Heat the milk, adding in the chocolate, stirring until melted. Stir in the crème fraiche until the mixture is nice and smooth. Leave to cool.

Step 3

  • Add the rhubarb mixture to individual dishes, swirl over the chocolate sauce and top with ground cardamom.
