Place the oats in a bowl or jar with the chia seeds, lemon zest and honey. Pour over the Organic LactoFREE Semi Skimmed Milk Drink and leave to soak overnight.
For the raspberry compote place the raspberries in a blender with the vanilla and process until fairly smooth but still with some texture.
Divide the oats between bowls or glasses and swirl the raspberry puree through. Serve with extra compote, a sprinkling of chopped pistachios and some whole raspberries.
