Tomato ketchup
100 ml
Sweet chilli sauce
1½ tbsp
Ground cumin
1½ tsp
Ground coriander
1½ tsp
Coarse salt

Pork neck
1½ kilo
Onions, finely chopped (about 250 g)

Instructions

  • Preheat the oven to 110 °C – conventional.
  • Mix ketchup, chilli sauce, cumin, coriander, and salt into a marinade.
  • Place the meat in an ovenproof dish. Rub the marinade well into the meat, spread the onions and garlic on top and add water.
  • Cover with a lid or aluminium foil and roast the meat in the middle of the oven for about 10 hours at 110 °C.
  • Pull the meat apart with 2 forks and mix it well with the onions and marinade.
  • Add salt and season to taste.
