Instructions

  • Soak the gelatine in cold water for about 5 minutes.
  • Place the cottage cheese in a food processor or blender. Process at the fastest speed for about 3 minutes (or until completely smooth). Add the orange zest, vanilla sugar, and syrup and blend for another 30 seconds.
  • Melt the chocolate in a bowl over a water bath.
  • In another bowl, whisk the egg whites until stiff.
  • Stir half of the cottage cheese into the melted chocolate until evenly distributed, then stir in the rest of the cottage cheese.
  • Heat the orange juice and melt the gelatine in it. Stir it into the cottage cheese mixture in an even stream.
  • Finally, gently fold in the egg whites.
  • Divide the chocolate mousse into 4 glasses and place them covered in the fridge for at least 4 hours, preferably overnight.
  • To serve, garnish the with hazelnuts and serve the orange fillets on the side.
