Instructions

Soup
  • Peel and chop the onion and trim and shred the leek.
  • Peel and cut the potatoes into smaller pieces, and roughly chop the parsley.
  • Fry onion and leek in butter in a large pan until soft. Add potatoes, stock, water, and nutmeg.
  • Bring to a boil and simmer under a lid for about 20 minutes until the potatoes are soft. Add parsley and blend the soup until smooth. Season to taste with salt and pepper.
White cheese toast
  • Preheat the oven to 200°C (conventional oven).
  • Peel and finely grate garlic and mix with olive oil.
  • Cut pitta bread into triangles and place in an ovenproof dish. Roast in the upper part of the oven for about 2 minutes until golden brown. Remove from the oven and turn the bread over.
  • Brush with garlic oil and crumble with white cheese.
  • Place in the upper part of the oven for about 3 minutes until the cheese is hot and the bread is toasted.
Serving
  • Arrange the soup on deep plates or in bowls.
  • Make a swirl with double cream and serve with white cheese toast on the side.
