Pork Tenderloin Salad with Large Bread Croutons

A super-quick salad that is filling and tastes great. The seasoned toasted bread is the icing on the cake.

Ingredients

Red apples
2
Apple vinegar
1 tbsp
Thawed Edamame beans (Soybeans)
300 g
Cucumber Cut Into Sticks
1
Sea salt
tsp
Freshly pepper
Smoked Pork tenderloin In Thin Strips
200 g
Dried cranberries
50 g
Cut chives
20 g
Light Stale Bread In Thick Slices, e.g. Country Bread
300 g
Cream cheese With Herbs
50 g

Instructions

Step 1

  • Mix the sliced red apples into vinegar.

Step 2

  • Mix the edamame beans, apples and cucumber in a dish and sprinkle with salt and pepper.

Step 3

  • Place tenderloin, cranberry and chives on the top of the salad.

Step 4

  • Toast the bread in a toaster and allow to cool slightly.

Step 5

  • Butter the bread and divide each slice into 4 triangles.

Step 6

  • Insert the bread into the edge of the salad and serve.
