Petit-Four with Mango, Mint and White Chocolate

Crispy flakes with white chocolate cream, topped with sweet-sour mango. A new favourite to serve with coffee.

Ingredients

The Flake

Icing sugar
80 g
Wheat flour
45 g
Egg white

Whipped cream

White Chocolate Team

Leaf gelatine

White chocolate

1/4 vanilla pod

Whipped cream
50 ml
Semi-skimmed milk
50 ml
Caster sugar
1 tbsp
Egg yolk

Topping

1/2 mango
½
Caster sugar
1 tbsp
Pressed lime fruits
2
Shredded mint Leaves
10 g

Instructions

Step 1

  • Heat the oven to 200 °.

Step 2

  • Mix the icing sugar and flour. Add egg white and cream and stir until a smooth mixture is formed.

Step 3

  • Spread the batter thinly on a baking tray lined with baking paper. Bake in the middle of the oven for 5-7 minutes Let it cool and break into smaller pieces.

Step 4

  • Soak the gelatine in cold water, for about 5 minutes.

Step 5

  • Chop the chocolate. Heat milk, cream, sugar and seeds from the vanilla pod in a saucepan.

Step 6

  • Pour the hot cream milk mixture over the egg yolk in a bowl while stirring. Pour the mixture back into the saucepan and heat slowly to 83 ° whilst stirring.

Step 7

  • Remove the pan from the heat, stir the gelatine until it melts, and pour over the chopped chocolate.

Step 8

  • Stir the mixture into a smooth cream. Allow to cool in a refrigerator.

Step 9

  • Chop the mango into small pieces. Mix the mango with sugar, lime juice and mint.

Step 10

  • Pipe the chocolate cream on the flakes and top with the mango.
