Pear Pie

Made with fresh pears and a hint of ginger, this lightly spiced pear pie makes for a wonderful holiday dessert at any festive event, but can be wholly enjoyed all year around. Complete with a flaky pie crust, juicy pear filling and a touch of ginger and vanilla to combine spice and sweet, this pear pie is a surprisingly delicious and comforting dessert dish.

Instructions

Step 1
  • Cut the butter into smaller pieces and rub into the flour. Mix sugar, vanilla sugar and ginger into the mixture. Make the dough by adding eggs and water. Rest the dough in a cool place for approximately 1 hour.
Step 2
  • Grease a tin or dish (about 23 cm in diameter). Divide the dough into 2 portions and roll out each portion into circles, slightly larger than the tin. Put one of the pieces of dough in the bottom of the tin, making sure to press the dough up into all the edges.
Step 3
  • Peel and chop the pears in half. Remove the core and place the pear halves in the tin with the curved side up and the stem end pointing towards the middle of the tin.
Step 4
  • Place the second dough piece over the pears and press well into the edges.
Step 5
  • Brush with cold water and sprinkle with a little sugar. Bake the pear dish in the middle of the oven for 40 minutes at 200 °.

Tip

Use firm pears that are not too ripe for your filling to prevent it from getting too soft and mushy.
