Instructions

  • Wash the berries/fruit and cut into small pieces. If using natural skyr, mix with vanilla essence or a drizzle of honey to add flavour and sweetness.
  • Add a layer of skyr to each mould.
  • Mix the remaining skyr with some of the freshly cut fruit and layer this mixture on top of the skyr in the moulds.
  • If you have space left, add a layer of chunky fresh fruit – the moulds should be around ¾ full.
  • Top with the granola and press lightly into the filling. Drizzle the honey over the granola, so it sticks together.
  • Push wooden sticks into the filling and freeze for at least 6 hours, ideally overnight.
  • To easily remove the lollies from the mould, gently run under warm water to loosen.
