Peanut butter cookies

Peanut butter cookies are an all-American classic. These cookies are not like the crispier ones that are enjoyed in many European countries, rather, they are soft and chewy. With our easy peanut butter cookie recipe, you get tender cookies with a crunchy twist from peanuts and an intense, deep flavour. The whole peanuts provide texture and even more of that delicious nutty taste, and because they are mixed into the batter, you are sure to get some in every bite.

Ingredients

Soft butter
125 g
Cane sugar (approx. 1¼ dl)
100 g
Sugar (approx. 1¼ dl)
100 g
Egg
1
Chunky peanut butter
150 g
Light syrup
2 tbsp
Peanuts
125 g
Flour (approx. 2½ dl)
150 g
Baking powder
1 tbsp
Fine salt
1 pinch

Instructions

  • Preheat oven to 175°C regular oven.
  • Beat butter and the two types of sugar until light and fluffy.
  • Whip in egg.
  • Mix peanut butter and syrup into the dough and fold in peanuts, flour, baking powder, and salt.
  • Place peanut butter cookie dough on lined baking sheets (approx. 1 tbsp per cookie)
  • Bake the cookies in the middle of the oven for approx. 15 minutes until golden.
  • Let peanut butter cookies cool on a wire rack – they are very brittle so while they are still hot, gently move them from the baking sheet so they do not break.
Enjoy!

Tips

A recipe for peanut butter cookies might sometimes describe them as drop cookies, that is, cookies that are made from dropping spoonsful of dough onto a baking sheet which then 'melt' into a flatter cookie while cooking. However, you can press them down just a bit, using either a finger or a spoon if you find the cookies are a bit too thick and dense.

Tips

Remember to make enough room between each ‘drop’ of cookie dough, since they will spread out a little bit. Also, take them out of the oven when they are still slightly gooey as they will set as they cool.
