Pasta with Spinach Sauce

Pasta with Spinach Sauce

This is a lightning fast dinner. Beautiful colours and delicious tasting.

Ingredients

Spinach Sauce

Water
50 ml
Frozen Whole spinach Leaves
450 g
Butter
25 g
Finely Chopped shallots
2
Bechamel sauce
500 ml
Dried fresh basil
tsp
Sprinkle Of Coarse salt
Freshly pepper

Pasta

Fresh pasta E.g. White Fettuccine
600 g

Tomato Salad

Tomatoes

Finely Chopped yellow onion
1
Coarse salt
Freshly pepper

Instructions

Step 1

  • Put water and spinach in a pan and thaw the spinach on a low heat.

Step 2

  • Pour the thawed spinach into a sieve and press to remove any water.

Step 3

  • Melt the butter in a pan and add the chopped shallots. Add white sauce, spinach, basil, salt and pepper.

Step 4

  • Bring the sauce to a boil. Simmer on a low heat and stir for approximately 2 minutes Taste.

Step 5

  • Cook the pasta as directed on the packet.

Step 6

  • Serve the tomatoes in serving bowls and sprinkle with onions, salt and pepper.
