Orange Truffles

Orange Truffles

Orange truffles are wonderfully indulgent. Truffles made with dark chocolate, grated orange zest and a splash of citrus liqueur, with a beautiful almond paste topping.

Ingredients

Whipped cream
100 ml
Butter
50 g
Dark chocolate
300 g
Oranges
Cognac
1 tbsp

Almond Topping

Almonds Paste
100 g
Food colourings
Cakes Decoration: Silver Balls

Instructions

Step 1

  • Boil the cream and butter in a saucepan. Remove the pan from the heat.

Step 2

  • Break the chocolate into pieces, and stir into the hot cream and let it melt. Stir in orange zest and brandy.

Step 3

  • Work almond paste until soft and drip in food colouring. Knead it until the colour becomes even and fine.

Step 4

  • Roll out the almond paste (rolls out well on a plastic cutting board) so that it covers the bottom of an aluminum mould, about 10 x 17 cm. Press it down into the bottom of the mould.

Step 5

  • Pour over the chocolate. Let it solidify in the refrigerator for at least 3 hours.

Step 6

  • Remove the truffle from the mould and cut it into pieces with a sharp knife. Decorate with silver balls. Keep refrigerated.
