Ingredients

Carrots

Eggs

Brown sugar
100 ml
Arla Cravendale Whole milk
100 ml
Butter & rapeseed oil
50 ml
Wheat flour
200 ml
Baking powder
1½ tsp
Ground cinnamon
1 tsp
Vanilla sugar
1 tsp

Frosting

Quark
150 ml
Icing sugar
50 ml

Instructions

  • Preheat the oven to 225°C (conventional oven).
  • Place 20 mini muffin cases on a baking tray.
  • Peel and finely grate carrots.
  • In a bowl, whisk eggs and brown sugar. Stir in milk and butter & rapeseed oil.
  • In another bowl, mix flour, baking powder, cinnamon, and vanilla sugar, and fold into the batter.
  • Add grated carrots and mix well.
  • Spoon the mixture into the muffin cases and bake in the middle of the oven for 6-8 minutes. Allow to cool.

Frosting

  • Whisk quark and icing sugar.
  • Spread the frosting on the cooled muffins. Garnish with carrot roses if desired.
