Minestrone

Name: Minestrone
Yield: 4 servings
Ingredients: 100 g bacon In Slices; 1 tbsp olive oil; 1 Small Finely Choppd garlic clove; 2 Coarsely Chopped yellow onions; celeriac In Smaller Pieces; 2 leeks In Rings; 3 carrots In Slanted Slices; 1 Can Of chopped tomato; 1¾ litre vegetable stock; 5 Small Sprigs Of Fresh thyme; 1 tsp coarse salt; Freshly pepper; 100 g Dried Whole Grain pasta; 50 g cream cheese; 1 tbsp milk; tsp coarse salt; Freshly pepper; 4 Thick Slices Of Coarse Stale Bread

Delicious hot minestrone soup to enjoy with a soft crisp bread.

Instructions

Step 1

Cut the bacon slices into strips and fry them in a pan for approximately 3 minutes.

Step 2

Add oil, garlic, onion, celery, leeks and carrots and fry for about another 2 minutes. Then add the tomatoes, stock, thyme, salt and pepper to the pan and bring the soup to the boil.

Step 3

Add the pasta and let the soup simmer until the pasta is tender for approximately 10 minutes. Taste.

Step 4

Mix the cheese, milk, salt and pepper together and spread onto lightly toasted bread. Put under the grill and grill until the cheese is golden. Grill for 5 minutes.
