The easiest way to cut and dice a mango is to first remove the two 'cheeks' by cutting around the stone in the middle. Place the mango on a cutting board with one of its ends pointing towards you. Now cut downward with a knife and guide it around the stone. Do this on the other side as well so you get two mango cheeks.
Place one of these cheeks on a thick tea towel and use your knife to slice down the length of the fruit. Make sure not to cut through the skin. Turn the mango 90° and repeat the motion to create a criss-cross pattern. Invert the mango so the cubes of golden yellow fruit flesh pop out from the skin.
