Instructions

  • Preheat the oven to 200°C (conventional oven).
  • Wash the lemon thoroughly.
  • Mix flour, icing sugar, vanilla sugar, and salt in a mixing bowl.
  • Finely grate the outer yellow zest of the lemon into the bowl. Add 1 tbsp freshly squeezed lemon juice, egg yolk, and butter. Quickly mix to form a dough. Be careful not to overmix.
  • Remove the dough from the bowl and shape it into two ropes. Cut each rope into 16 pieces.
  • Roll into balls and place them on two baking trays lined with baking paper. Gently press the biscuits down with a fork.
  • Bake in the middle of the oven for 12-15 minutes. Let the biscuits cool on the tray.
