Arla® LactoFREE Milk
250 ml
Lactose-free butter, soft
50 g
Sugar
250 g
Wheat flour
275 g
Eggs
3
Red food colouring
1 tsp
Cocoa powder
2 tbsp
Vanilla sugar
1½ tbsp
Fine salt
½ tsp
Vinegar
1 tsp
Baking soda
1 tsp

Frosting

Lactose-free natural cream cheese
200 g
Lactose-free butter
50 g
Powdered sugar
150 g

Instructions

Cupcakes

  • Preheat oven to 225°C.
  • Beat lactose-free butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well between each.
  • Stir in lactose-free milk and red food colouring.
  • Mix flour, cocoa, vanilla sugar, and salt. Fold it gently (sprinkled through a sieve) into the egg mixture.
  • Mix vinegar and baking soda and fold it into the batter when it starts to bubble.
  • Divide the batter into muffin tins to just below the rim.
  • Bake the cakes in the centre of the oven. First 5 min. at 225°C. Then turn down the heat and bake for approx. 15 min. at 175°C.
  • Let them cool on a baking tray.

Frosting

  • Beat lactose-free cream cheese and butter until smooth.
  • Add the icing sugar a little at a time while still whisking.
  • Stop whisking when the frosting is smooth.
  • Pour it into a piping bag fitted with a round nozzle. Chill it in the fridge for about 30 minutes.
  • Top the cooled cupcakes with frosting.
