Frosting
  • Beat lactose-free cream cheese and butter until smooth.
  • Add the icing sugar a little at a time while still whisking.
  • Stop whisking when the frosting is smooth.
  • Pour it into a piping bag fitted with a round nozzle. Chill it in the fridge for about 30 minutes.
  • Top the cooled cupcakes with frosting.
Enjoy!
Tips

Make sure the lactose-free cream cheese and butter have softened to about room temperature before making the frosting. This makes the mixing process easier, resulting in the smoothest texture possible. Should the frosting become too soft, you can always refrigerate it for a short time to give it a firmer texture.

Questions about red velvet cupcakes

Want to know more? Keep reading below as we go through the burning questions you might have on these lactose-free red velvet cupcakes with cream cheese frosting!

Can you freeze lactose-free red velvet cupcakes with cream cheese frosting?
Yes, you can freeze lactose-free red velvet cupcakes with cream cheese frosting for 2-3 months! You can freeze them with or without frosting – just make sure that they are cooled before putting them in an airtight container in the freezer. However, the texture of the frosting might change, so we recommend freezing them without and whipping up a new batch of cream cheese frosting. Allow them to thaw overnight in the fridge. That way, there is a bigger chance they keep their firm texture and delicious taste.
How long do lactose-free red velvet cupcakes with cream cheese frosting last?
Lactose-free red velvet cupcakes with cream cheese frosting last for about 2-3 days in the refrigerator. Just make sure they are sealed in an airtight container or covered with plastic wrap. The frosting can be sensitive to warmer temperatures, so keeping them in the fridge will help them maintain their consistency and fresh taste.
What do red velvet cupcakes taste like?
Despite their beautiful red colour, red velvet cupcakes have a slight chocolaty flavour. They also have a slight tanginess from the vinegar, which also helps create their distinct red colour. With a classic cream cheese frosting on top, they get a deliciously mild and sweet flavour, too, with smooth vanilla notes.
