A lactose-free quiche is perfect as an easy dinner, lunch, or picnic for everyone to take part in. As it is rich, it cannot be called a light meal. However, for freshness and a lighter feel our lactose-free quiche Lorraine recipe uses lactose-free sour cream instead of the more traditional cream. It is filled with the savoury goodness of smoked ham and cheese and is flavoured with Herbes de Provence.

Instructions

Pastry crust
  • Cut butter into small cubes and crumble it into the flour. Add salt and water and quickly mix it well.
  • Press the dough into a greased baking tin (22 cm diameter, preferably a springform) in an even layer.
  • Cover the baking tin and put it in the fridge for at least 30 minutes.
  • Meanwhile, preheat the oven to 200°C (top & bottom heat).
  • Use a fork to poke holes in the bottom of the crust and bake it for about 10 minutes.
Filling
  • Spread diced ham over the pre-baked crust.
  • Beat eggs, sour cream, flour, and herbs and spread the mixture over the ham. Sprinkle grated cheese over the filling.
  • Bake the lactose-free quiche in the middle of the oven until the cheese has melted and the filling is cooked. This takes about 40 minutes.
  • Serve the lactose-free quiche Lorraine warm.
