Ingredients

Lactose-free double cream (plus extra for serving)
50 ml
Cauliflower heads (florets)
400 g
Vegetable stock
800 ml
Garlic cloves, crushed

1 tbsp
White onion, diced

Ground paprika
½ tbsp
Ground turmeric and a little more to serve
½ tbsp

To serve:

Pumpkin seeds, roasted
2 tbsp
Fresh coriander, chopped
2 tbsp

Instructions

  • Place a large saucepan over medium heat. Heat olive oil and reduce the heat to low. Add onion, garlic, paprika, and turmeric. Cook for about 10 minutes, stirring frequently, until onions are soft.
  • Add cauliflower and cook for another 5 minutes.

  • Let the soup cool slightly, cover with a clean tea towel, and puree.
