Instructions

Chocolate base
  • Preheat the oven to 160°C (convection/ fan oven).
  • Whisk eggs and sugar until light and fluffy. Add milk.
  • Mix flour and baking powder and fold into the egg mixture.
  • Melt butter and chocolate and fold together with biscuits in the batter.
  • Line the base of a springform cake tin (approx. 22 cm in diameter) with baking paper and brush the base and sides with melted butter.
  • Pour the batter into the cake tin and bake in the middle of the oven for about 15 minutes – it should be slightly underbaked.
  • Let the cake cool slightly. Remove from the cake tin and let it cool completely on a wire rack.
  • Wash the springform cake tin and line the sides with thin plastic or cling film. Put the chocolate base back in the cake tin.
Vanilla mousse
  • Soak the gelatine leaves in cold water for about 10 minutes.
  • Mix lactose-free cream cheese with egg yolks, lactose-free sour cream, vanilla seeds, lemon zest, and lemon juice.
  • Melt gelatine and any water that clings to it in a water bath.
  • Whisk egg whites until stiff, add icing sugar, and whisk for an additional 2 minutes.
  • Fold the stiffly whisked egg whites into the cream cheese mixture.
  • Pour the cream cheese vanilla mousse over the chocolate base. Cover the cake and refrigerate it for about 1 hour. The white mousse must set before the blueberry mousse is poured on top.
Blueberry mousse
  • Soak the gelatine leaves in cold water for about 10 minutes.
  • Bring blueberries, sugar, and lemon juice to a boil in a thick-bottomed pan. Cook for about 5 minutes.
  • Blend the berry mixture in a food processor until smooth and let it cool.
  • Mix lactose-free cream cheese with the berries.
  • Lightly whip lactose-free double cream and fold it into the berry mixture.
  • Melt gelatine and any water that clings to it in a water bath.
  • Mix gelatine with a bit of cream cheese mixture and fold it into the rest.
  • Pour the blueberry cream cheese mousse over the vanilla mousse and cover the finished cake. Refrigerate for at least 3 hours, preferably overnight.
Salted caramel
  • Melt sugar in a pot over low heat until golden.
  • Add lactose-free double cream and salt and cook the caramel for about 10 minutes or until the sugar has dissolved.
  • Pour the caramel into a bowl and let it cool.
  • Remove the cheesecake from the tin and decorate it with salted caramel, fresh blueberries, and edible flowers.
