FAQ: Questions about harvest pasta

Get to know more about our harvest pasta. Keep reading below and explore our questions and answers about the recipe so you can get the best out of it.

Can I prepare harvest pasta ahead of time?
Yes, you can prepare the harvest pasta in stages to save time. Cook your pasta and the vegetables ahead, then cool and store them in the fridge. Do the same for the pork belly. When it is time to eat, warm the pasta, pork, and vegetables, stir in the crème fraiche, and top with a generous amount of freshly grated cheese and crisp rucola salad for a delightful presentation.
Can I use frozen vegetables?
Yes, you can use frozen vegetables if you cannot get them fresh. Make sure to thaw them properly and pat them dry before cooking. This prevents excess water from diluting your sauce and ensures the vegetables maintain a good texture. While fresh vegetables are often preferred for their crispness and taste, frozen vegetables are a convenient alternative that can still yield a delicious dish.
Can I store leftover harvest pasta?
Yes, store your leftovers in a sealed container in the fridge for up to 3 days. When it is time to enjoy the dish again, warm it slowly in a pan on medium heat. Stir in a bit of crème fraiche or water to restore the creamy texture of the sauce. We advise against freezing the dish as it may cause the pasta to become mushy, the crème fraiche to separate, and the vegetables to become soggy.

Tips: Perfect your harvest pasta

Discover tips to take your harvest pasta from good to great. Embrace these simple twists to add flavour and bring a visual feast to your table.

Choose fresh ingredients

Use the freshest vegetables you can find for the best flavour and texture. Fresh corn, carrots, courgettes, and broccoli not only enhance the taste of your pasta but also add vibrant colours and a satisfying crunch.

Even cutting

Cutting the different types of vegetables into even-sized pieces is crucial for consistent cooking. This ensures that all the vegetables cook at the same rate, preventing some from becoming overcooked while others remain undone. Uniform pieces also make the dish more visually appealing and easier to enjoy.

Drain excess fat

After frying the pork belly, consider draining any excess fat on a paper towel. This simple step prevents your pasta from becoming too greasy, ensuring a balanced and enjoyable meal. Retaining some of the rendered fat in the pan can add rich flavour to your sauce, but removing the excess keeps the dish from feeling too heavy.
