Instructions

  • Preheat the oven to 175°C (conventional oven).
  • Roughly chop almonds.
  • Stir almond paste in a stand mixer, gradually adding butter and mixing until combined.
  • Add eggs one at a time while stirring, then fold in chopped almonds.
  • Spoon the mixture into a greased springform pan 22 cm in diameter.
  • Bake in the middle of the oven for about 18 minutes. Allow to cool.
Filling
  • Chop chocolate and place it in a bowl.
  • Brown butter in a saucepan. Add double cream and sugar.
  • Place egg yolks in a separate bowl and gradually pour in the butter mixture, stirring constantly.
  • Place the mixture back in the saucepan and heat to 83°C, stirring continuously.
  • Pour the butter and egg mixture over the chocolate, stirring until smooth.
  • Pour the filling over the cooled cake base and put it in the fridge to set for at least 4 hours.
Decoration
  • Optionally: Decorate with marzipan eggs and chocolate nests.
