Gluten-free chocolate Chip Cookie

A gluten-free version of the classic chocolate chip cookie - where the wheat flour has be replaced with corn starch. Crispy on the outside and gooey inside. A real favourite!

Ingredients

Butter
75 g
Chopped dark chocolate
400 g
Caster sugar
240 g
Corn Starch
200 g
Cocoa
60 g
Baking soda
2 tsp
Salt
½ tsp
Dark chocolate Chips
100 g

Instructions

Step 1

  • Melt the butter and chocolate together. Add the sugar and mix until the sugar melts. Allow to cool slightly.

Step 2

  • Add the eggs and mix into a smooth batter. Mix the dry ingredients and stir into the batter.

Step 3

  • Stir in chocolate chips. The batter should be quite loose.

Step 4

  • Allow the batter to cool for 20-30 minutes. Heat the oven to 175 °.

Step 5

  • Pour out the batter onto baking trays lined with baking paper. Spreading out the cookies slightly - so they don't merge.

Step 6

  • Bake in the middle of the oven 13-15 minutes.

Step 7

  • Let the cookies cool down on a plate or rack. Serve the cookies with cold milk.
