An easy and quick bread that is heated in the pan. Our warm flatbread does not have to sit for hours to rise – it goes directly onto the pan and is ready to savour within just a few minutes. Making these delicious bread does not have to be complicated with a dozen ingredients or several hours of prep. Using baking powder, you can bake them in a warm pan immediately after putting together the dough. Serve the quick flatbread topped with greens and spices, with a salad or as the main course.

Ingredients

Rye flour (approx. 1 dl)
50 g
Baking powder
2½ tsp
Sugar
½ tsp
Coarse salt
1 tsp
Wheat flour (approx. 4½ dl)
250 g
Milk
¼ litre
Butter for baking
25 g

Instructions

  • Mix rye flour, baking powder, sugar, salt, and wheat flour in a bowl (save some flour).
  • Add milk and beat the dough well with a kitchen spoon. Take the dough out and knead it on a counter or table sprinkled with flour (add the rest of the flour if necessary).
  • Divide the dough into 6 portions and roll them out into round dough sheets (approx. 20 cm in diameter).
  • Melt some of the butter in a pan (approx. 21 cm in diameter). Place the flat dough in the pan and bake it at medium heat, approx. 2 minutes on each side.
  • Bake the last sheets of dough and wrap them in foil, so they stay warm and soft. Serve the bread warm.

Tips

No one wants to eat dry and heavy bread so make sure you go easy on the dough when kneading it – handle it with a light touch. This will give you fluffy and puffy bread that begin to form huge bubbles once it hits the heated pan. Bake the bread until the surface is bubbling and the bread has a golden colour.

Our flatbread are suited for freezing, so you can easily prepare them in advance to save time and simply defrost and reheat the bread whenever you need them. Once they have cooled off, wrap them in baking paper and place them in an airtight container before transferring them to the freezer.

What is flatbread?

Add goat cheese and fresh blueberries before baking it for approx. 10 minutes. As a final addition, drizzle with honey and fresh mint leaves. It is a delicious combination of sweet, tart, and tangy.

Can you freeze flatbread?

Flatbread freeze very well and can keep fresh for up to 4 months. Follow our recipe and allow the bread to cool on a wire rack. Wrap each piece of bread tightly with a piece of baking paper or wax paper. You can add a layer of cling film to ensure that they are wrapped completely airtight. Place the bread in a freezer bag or an airtight container to prevent freezer burn. Reheat them by wrapping the bread in a damp kitchen towel to keep them soft and microwave them for 30 seconds or until warm.

How to store flatbread?

Store the flatbread in an airtight container or a freezer bag at room temperature. This will keep the bread well for about 2-3 days. Make sure the bread has cooled before placing it in the container or freezer bag. We do not recommend storing the bread in the fridge because it can affect the texture, and you might end up with dry bread.

Different toppings for flatbread

There are no rules when it comes to picking flatbread toppings. It just comes down to your personal preference and favourite flavours.

For an oven-dried tomato flatbread, spread a roasted garlic purée made from olive oil, coarse salt, black pepper, and garlic on top of the bread. Add oven-dried tomatoes and slices of mozzarella before baking it in the oven. Serve it with drizzles of balsamic vinegar and sprinkles of basil.

Make a pesto flatbread by spreading pesto onto the bread, followed by mozzarella and spinach, and sprinkle with red pepper flakes.

Both flatbread toppings are aromatic and full of flavour and are great if you are in a hurry and need of a super quick meal.

Experiment with the dough

Use our quick flatbread recipe to make thin, crisp bread. Divide the dough into 24 portions and roll them out into very thin sheets of dough (approx. 14 cm in diameter). Place the dough baking trays lined with baking paper and brush them with approx. 50 g of melted butter. Bake the bread on the top, middle and bottom racks of the oven for about 12-15 minutes at 200°C. Serve the warm, crispy bread as a snack. You can cut them into pieces and enjoy them with your favourite dips.
