Instructions

  • Preheat the oven to 175°C (fan oven).
  • Whisk sugar, butter or spreadable, egg, milk, quark, and lemon zest until just combined.
  • In another bowl, mix flour, baking powder, and salt, then sift into the wet ingredients and knead the dough until it is well combined.
  • Roll out the dough on a floured surface to approx. 1 cm thickness.
  • Cut out 20-25 bunnies and place them on a baking tray lined with baking paper.
  • Brush the bunnies with melted butter.
  • Bake for 10-12 minutes or until baked through and light brown. Allow them to cool slightly.
  • Brush the bunnies again with melted butter, then dip them in sugar and serve while fresh.
Enjoy!
Tips

Be mindful when rolling out the dough. Make sure it is 1 cm thick, as described in the recipe. If the dough is too thin, the bunnies might come out too crispy, and if it is too thick, they may not bake evenly.

Tips

If the dough is too sticky to work with, you can chill it in the fridge for about 30 minutes before rolling it out. It makes it easier to handle and helps keep the shape of the bunnies during baking.

Try our recipe for sweet baked Easter bunnies

These Easter quark bunny biscuits with a hint of lemon and a tender crumb from quark are the perfect treat for adding a festive touch to your Easter celebrations. Their distinctive shape and sugary coating make them irresistible to both kids and adults, promising to bring joy and a touch of whimsy to your holiday table.

Moist shortbreads with quark

Shortbread biscuits are usually tender and crumbly. These quark bunnies are too, but they also offer a lighter, airier, and somewhat denser texture because of the addition of baking powder and quark. Quark and lemon zest balance the richness of traditional shortbread with a refreshing citrus twist and provide a buttery and tender bite. The quark also adds a slight tanginess that beautifully complements the buttery richness and sweetness of the sugar topping.

Brushed with butter and dipped in sugar

What sets these quark bunnies apart is the final touch of brushing them with butter and dipping them in sugar. The melted butter adds an indulgent, sweet, buttery flavour to the biscuits, while the sugar enhances the sweetness and gives them a delightful crunch. This means that every bite consists of a delightful mix of sweet flavour, tender biscuit, and sugary crunch.

Make bunny-shaped shortbread biscuits part of your Easter feast

Bunnies are, to many, a clear, festive symbol of Easter, so these delicious Easter quark bunnies are perfect for the occasion. They resemble classic shortbread biscuits, but the quark brings a different texture. They have the perfect balance between dense and light, being firm enough to hold their shape, yet possessing a soft, slightly crumbly texture. The Easter bunnies are simply delicious, and they will be a treat for family members and guests of all ages with their cute bunny shape and delightful shortbread texture. Serve them with other Easter treats for a complete Easter dessert table. Try our cute Easter bunny cake, festive Easter cake pops , moist blueberry cheesecake muffins, or traditional simnel cake.

Ideas for varying the recipe

The sweetness from the butter and the sugar coating can easily be combined with other flavours. Instead of lemon zest, try using orange, lime, or grapefruit zest for a different citrus note. You can also incorporate spices such as cinnamon, nutmeg, cardamom, or ginger into the dough. A little spice can add warmth and depth, and mixed with the citrus flavour, it makes for an irresistible must-try combination. Instead of dipping the butter-coated quark Easter bunnies in regular sugar, you can experiment with different types of sugar. Brush them lightly with brown sugar for a deeper, caramel-like flavour, or dip them in coconut sugar for a more subtle sweetness with a hint of coconut.
