Instructions

  • Roughly chop two of the cucumbers and dice the third.
  • Put the coarse cucumber pieces in a blender together with avocado, water, stock, ice cubes, mint, salt, and pepper. Blend until the mixture is smooth and light green.
  • Put the cucumber soup in the fridge before serving.
  • Pour boiling water over the onions and leave them on the kitchen counter for approximately 2 minutes.
  • Put the onions in a sieve and rinse them with cold water. Add onions and the small cucumber cubes to the soup, stir well, and taste.
  • Carefully mix salmon, white cheese, and edamame beans. Serve the cold soup with the added toppings together with a toasted baguette.
