Crispy cheese tacos – so easy and delicious! Fry mini tortillas with melted grated cheddar and voila – you have a taco with crispy cheese! This recipe adds a spicy bean filling, but you can use whatever filling you like – leftover meat, salsa, or avocado. Tacos are a true street food classic that you can eat them in a few bites as soon as it’s assembled. Serve your crispy cheese tacos with chilli con carne, or other varieties of tacos for a true Mexican feast.

Instructions

Spicy bean filling
  • Thinly slice the pepper and the red onion, then fry in a pan with some oil for about 2 minutes.
  • Add beans and spices and fry them with the vegetables for 1 minute.
Crispy cheese tacos
  • Melt about 40 g grated cheddar (¼ of the bag) in a pan over medium heat.
  • Place a tortilla on top of the melted cheese and give it a light press so that it sticks to the cheese.
  • Let it fry for 1 minute.
  • Flip the crispy cheese taco and place the filling on top of the crispy cheese while it cooks on the bread side.
  • Fold it in half and place it on a wire rack while you repeat the process with the remaining tortillas.
For serving
  • Serve with fresh coriander, lime, and chilli.
