Creamy Skyr with granola and berries

Instructions
Tip
For perfectly crunchy granola, make sure not to bake the mixture in the oven at too high temperatures. This might cause it to burn before it dries up to get all nice and crispy. Use lower temperatures and keep an eye on it, stirring from time to time to help it brown evenly. To keep granola crispy and flavourful, make sure it cools off completely before putting it in a container. Also, make sure to store it in a sealed container in a dry place at room temperature. Humidity or moisture will cause the granola to go soggy and maybe lose some of its flavour.
Tip
It is also possible to freeze granola. Make sure the granola has cooled to room temperature, then place it in an airtight container or Ziploc bag and keep it in the freezer for up to six months. Defrost overnight on the counter.
Questions about skyr with granola and berries
Ready to venture into making homemade granola and savouring it on deliciously creamy skyr? Then read our questions and answers about skyr and granola below.
Making skyr with granola only requires two things: a bowl of fresh, cold, and creamy skyr, and a batch of the best crunchy granola. It is possible to add compotes, fresh fruit or berries, or the like on top to give it some more freshness. Otherwise, put skyr in a bowl and top with your favourite crunchy granola – homemade, oven-baked oats, seeds, nuts, dried berries, honey, oil or butter, and sweet vanilla to complement the deliciously crunchy bake.
Making homemade granola requires oats, oil, nuts, seeds, dried berries or fruit and a binding agent. The best binding agent for granola is honey, but also egg, brown sugar, syrup, or gelled chia seeds. Mix all ingredients except for fruit and berries and easily burned ingredients like coconut flakes. The latter is added mid-baking, while berries and fruit are added when the granola has cooled down completely. Bake in the oven until brown and crispy, let cool, and store in an airtight container.
Berries with a lot of flavour are always a good choice for a bowl of skyr. Use dried berries for granola to avoid making it soggy and go bad. Pick and choose between dried berries like sour cranberry, goji berry, or raspberry, sweet strawberry or blueberry, or even dried fruit like mango, papaya, pineapple, and melon. You can also choose fresh fruit or berries as a topping for skyr, making it feel deliciously fresh and light.

Skyr is delicious in itself but combining it with something crunchy makes it even better. Adding sweetness and tanginess to that crunch with goji berries, cranberries, and vanilla means adding an edge to the well-known and loved breakfast topping. Skyr is thick, creamy, and very delicious, making it perfect for breakfast; especially with crunchy, sweet, and fresh toppings. But why only enjoy skyr and granola in a bowl? Try our recipe for skyr ice lollies with granola and berries or frozen skyr bark, adding granola on top before freezing; both are perfect for a light snack or a refreshing and new type of breakfast.
Experiment with your baked granola ingredients
Making homemade granola lets you decide on your favourite flavours. Go your own way and experiment with your favourite berries, seeds, nuts, and sweet spices like vanilla, cinnamon, and cardamom. Also, mix in chocolate chips after cooling for a sweet treat right from early morning; for example, a mix of white, milk and dark chocolate to get both sweet, fresh, and slightly bitter flavours.
