Cold Pea Soup with Yogurt and Grissini Breadsticks

Ingredients

Small shallot
1
Jalapeño chilli

Garlic clove

Frozen peas
200 g
Cucumbers
225 g
Fresh coriander
1 handful
Lime juice
3 tbsp
Yoghurt
1½ g
Salt
1 tsp
Water
½ litre

Topping / Garnish:

Yogurt, plain
½ ml
Water
2 tbsp
Finely chopped shallots
2
Lime fruits Peel
1 tbsp
Ground coriander
2 tbsp
Black pepper
pinches

Grissini Breadsticks (approx. 15 pcs):

Yeast
25 g
Lukewarm semi-skimmed milk
1 litre
Salt
1 tsp
Olive oil
1 tbsp
Wheat flour
125 g
Wholemeal flour
50 g
Water For brushing
Sesame seeds for toping

Instructions

Step 1

  • Mix yeast with lukewarm milk until it is dissolved. Add salt, oil and 2/3 of wheat flour. Mix well and knead well with the rest of the flour. Knead the dough for 5 min.

Step2

  • Make a long sausage and cut the dough into 15 pieces. Roll small balls and roll them into sticks.

Step 3

  • Place each stick on a baking sheet with parchment paper. Let them rise for 15 min.

Step 4

  • Cold Pea soup

Step 1

  • Blend all the ingredients in a blender until you reach a smooth consistency

Step 2

  • Keep refrigerator until serving. Add water to the yogurt to make it more liquid

Topping:

  • Pour the soup into bowls. Add the watered-down yogurt to the soup. Dress with shallots, cucumber, lime zest and fresh coriander. Add the freshly grounded pepper. Serve with grissini breadsticks.
