Instructions

Dough

  • Mix the dry ingredients for 10 minutes using a whisk or hand mixer with dough beaters.
  • Gradually add water and olive oil.
  • Add salt and stir for about 30 seconds before placing it in the fridge for at least 2 hours.
  • Sprinkle flour on a work surface and knead the dough with moist palms.
  • Flatten the dough very thinly with a rolling pen and move it onto a baking tray covered with baking paper (shape can vary from round to square to your wish).

Tomato sauce

  • Preheat the oven to 275–300 °C.
  • Sauté garlic, onion, and chilli in olive oil for 2 minutes before adding tomato purée and balsamic vinegar. Cook for another 2 minutes.
  • Add peeled tomatoes and leave it on medium heat for about 5 minutes. 
  • Add sugar and salt to the tomato sauce.
  • Cut 20–25 cherry tomatoes into fine slices and add them to the sauce.

Topping

  • Spread tomato sauce on the dough, top with chorizo, and sprinkle the mozzarella cheese generously over the pizza.
  • Place the pizza in the oven for ​​5–6 minutes until the cheese melts and gets the first signs of a crispy crust.
  • Serve with finely chopped herbs on top.
