Prepare chilled pea soup in advance

Prepare the chilled pea soup ahead of time and keep it in the fridge. When refrigerated and covered, the soup keeps well for up to two days. Before you serve it, blend the soup quickly to ensure a smooth consistency and even distribution of flavours.

Choose fresh produce

Select quality vegetables for the freshest chilled pea soup. Springtime green peas and asparagus add natural sweetness and a soft texture that surpasses frozen options. Select peas that have plump pods without any discolouration or wrinkles. As for the asparagus, look for those that have a bright green colour and are firm and tight.

Green peas and asparagus with creamy Greek yoghurt

The base of the cold pea soup is made up of fresh, green vegetables and a deliciously creamy texture. By combining green peas and asparagus, the soup amazes with sweet and earthy nuances. While green peas are sweeter, asparagus provides the earthier notes that help round out the flavour. Cucumber adds another dimension of freshness, just as the tangy Greek yoghurt improves the consistency. The addition of white cheese elevates the smooth creaminess. Top the soup with a few blanched peas and asparagus to give it a bit of bite.

Infused with lemongrass, cool mint, and spicy chilli

Lemongrass introduces a bright, lemony citrus taste with subtle hints of ginger and mint. To fully embrace the cool flavour, we have added Moroccan mint because it helps accentuate the fresh vegetables. As a final flourish, the subtle heat from green chilli adds complexity and warmth without ever becoming too intense.

Serve with complementary sides

If you are looking for a lighter lunch or dinner option, this pea soup certainly fits the bill. But you can also serve it with complementary sides, such as a simple salad with fresh seasonal greens or a piece of crusty bread. The bread is perfect for dipping and soaking up the delectable pea soup.

Make the dish your own

Make the recipe your own by adding or substituting different ingredients. Try adding ripe avocado or coconut milk instead of Greek yoghurt. Avocado brings a buttery texture, while coconut milk introduces a gentle sweetness and smoothness.

The soup might also benefit from less or more heat, depending on your preferences. You can always adjust the spice level. If you want more heat, increase the amount of chilli or add a pinch of smoked paprika for a mild smokiness. Have fun experimenting with the chilled pea soup!
