Ingredients

Caesar mayonnaise

Double cream

Instructions

Caesar mayonnaise

  • Pour the cream into a blender with garlic, lemon juice, salt, and pepper.
  • Blend at high speed for about 10 seconds. Then, while the blender is running, slowly add the oil in a thin stream.
  • Cover the Caesar mayonnaise and refrigerate for at least 1 hour.
  • Season to taste.

Pickled red onions

  • Melt the butter in a pan over high heat, but without browning it.
  • Cook the onions for about 2 minutes.
  • Add vinegar, sugar, and salt, and cook the onions over medium heat for 5-7 minutes, or until the vinegar has almost evaporated.
  • Let the onions cool and remove from the brine.

Marinated chicken

  • Let a grill pan heat up well – about 4 minutes at high heat.
  • Coat the fillets with oil and grill them at medium heat for about 10 minutes turning occasionally.
  • Remove the fillets, let them cool slightly, and shred them with two forks.
  • Mix the meat with Worcestershire sauce, oil, salt, and pepper, and let it marinate, covered, in the refrigerator for at least 30 minutes – preferably overnight.

Crispy cheese chips

  • Preheat the oven to 175°C (conventional oven).
  • Spread the cheese thinly on a baking sheet lined with parchment paper.
  • Bake in the middle of the oven for 6-7 minutes – the cheese should be golden but not burnt.
  • Lift the parchment paper with the crispy cheese onto a wire rack and let it cool.
  • Break the cheese into bite-sized chips.

Serving chicken sandwiches

  • Split the buns and toast them on both sides (let the buns cool if they are to be packed for a picnic).
  • Spread the Caesar mayonnaise onto the buns and fill them with lettuce, bacon, marinated chicken, artichoke hearts, and pickled red onions.
