Instructions

Broth
  • Bring water and chicken stock to a boil in a saucepan. Simmer for 10 minutes.
  • Peel and slice garlic and ginger. Cut the green part of the spring onion into rough pieces. Add to the saucepan. Add chilli flakes and let the broth simmer while you make the rest of the components.
  • When you are ready to serve, strain the broth.
Seasoning sauce
  • Stir miso paste, tahini, sesame oil, and egg yolk together in a small bowl to make the seasoning sauce.
Toppings
  • Boil eggs for 7 minutes. Cool and peel.
  • Fry the chicken breast fillet in a bit of butter until cooked through. Season with salt and pepper. Slice the chicken.
  • Slice mushrooms. Melt butter in a frying pan and fry the mushrooms until they are nicely coloured.
  • Thinly slice the white part of the spring onion. Cut the nori sheet into pieces.
