Elderflower syrup

Rhubarb, cut into 2 cm pieces

Cane sugar

Balsamic nuts

Dark balsamic vinegar
4 tbsp

Instructions

Chia pudding

  • Mix skyr with yoghurt, elderflower syrup, chia seeds, and oats in a large bowl.
  • Cover the mixture and refrigerate for at least 4 hours, preferably 12-16 hours.

Baked strawberries and rhubarb

  • Spread rhubarb and strawberries in a baking dish (approximately 22 x 30 cm).
  • Sprinkle with sugar and bake for 15 minutes at 225°C (traditional oven) in the middle of the oven. Let them cool slightly.

Balsamic nuts

  • Bring balsamic vinegar to a boil in a pan.
  • Add hazelnuts and roast them for about 2 minutes or until the vinegar thickens and becomes sticky.
  • Spread the nuts on a plate without touching each other and let them cool.

To serve

  • Arrange the chilled chia pudding in 4 deep plates and top with baked strawberries and rhubarb.
  • Sprinkle with balsamic nuts and garnish with red sorrel.
