Instructions

  • Soak the gelatine in cold water for approx. 10 minutes. Place macaroons in the bottom of 4 glasses. Pour sherry over and place preserved cherries on top.
  • Mix cultured milk and sugar.
  • Whip double cream to a light foam. Reserve some whipped cream for garnish and fold the rest into the cultured milk mixture.
  • Remove the gelatine from the water and melt it with the water that clings to it. Add cherry juice to the gelatine and fold into the cream mixture.
  • Stir occasionally until the mousse begins to set and pour it over the cherries.
  • Cover and refrigerate the cherry trifle for a couple of hours and garnish with whipped cream just before serving.
