  • Cook pasta in boiling salted water until it is halfway to al dente. Drain and set aside.

  • In a pan, heat olive oil, then add garlic and chilli flakes. Cook for 30 seconds, then add tomato purée. Season with salt and pepper, add herbs and bring to a boil. Simmer on low heat for 10 minutes, then add cooking cream.
To bake
  • Preheat the oven to 200 °C.
  • Line a deep baking dish with aluminium foil (alternatively baking paper), letting the foil hang over the sides of the dish.
  • Pour the pasta and sauce into the lined baking dish. Top with shredded mozzarella cheese.
