Instructions

  • Preheat oven to 200°C (regular oven).
  • Mix flour, baking powder, and salt and transfer to a big bowl through a sieve. Make an indent in the middle of the flour mixture.
  • Beat eggs, sugar, and vanilla sugar until light and fluffy. Pour the egg mixture into the indent along with mashed bananas and melted butter.
  • Gently combine the batter with a spatula and fold in the chocolate chips – but save about ½ dl of them for later. Make sure not to overmix the batter. It is okay if it is a little lumpy.
  • Pour the batter into 12 muffin moulds (about 1 dl in each) and sprinkle the remaining chocolate chips on top.
  • Bake the banana muffins with chocolate in the middle of the oven for about 15-20 minutes.
