Banana bread with Coffee yoghurt frosting

Ingredients

Brown sugar
200 g
Spreadable room temperature
60 g
Large eggs
2
Large ripe bananas mashed
4
Arla Lactofree greek yogurt
85 g
All-purpose flour
200 g
Rolled oats
50 g
Baking soda
1 tsp
Vanilla
½ tsp
Cinnamon
1 tsp
Salt
½

Coffee yoghurt frosting:

Arla Lactofree greek yogurt
150 g
Strong coffee
2 tbsp
Icing sugar
2 tsp

Instructions

Step 1

  • Whisk sugar and butter together to a creamy mass, add eggs and beat until light and fluffy.

Step 2

  • Mash your bananas and turn them into the dough with the yoghurt.

Step 3

  • Mix wheat flour, oatmeal, baking powder, vanilla powder, cinnamon and salt together and fold it into the wet mass.

Step 4

  • Put your dough in a lined form, and give it approx. 30-40 minutes at 200 degrees, (preheated oven) While you wait for the bread, you can make your coffee cream. Here you mix Greek yoghurt with icing sugar, and season with strong coffee.

Step 5

  • Use a knife to check if the cake is done Let the banana bread cool a bit and serve with delicious coffee cream
