Vegetable stock cube

Boiling water
250 ml
Olive oil

Small aubergines, cut into ½ cm rounds

Instructions

  • Add the vegetable stock cube to boiling water.
  • Place couscous in a large bowl and pour over the boiling water. Cover with cling film and let it sit for 5 minutes.
  • Preheat a griddle pan over a high heat.
  • Drizzle 3 tablespoons of oil over the aubergines and red onion. Season well with the za’atar. Griddle in batches until golden and tender.
  • Using a fork to separate the couscous. The salad can be served both warm and cold.
  • Toss together the couscous, tomatoes, cucumber, parsley, and season to taste.
  • Spoon the mixture onto a platter and top with the aubergine, onion, and pistachios.
  • Mix the remaining 2 tablespoons of olive oil, lemon juice, and zest and drizzle over.
  • Garnish with crumbled white cheese.
