Mozzarella cheese, grated

Large aubergine

Air-dried ham

Breadcrumbs

Instructions

  • Preheat the oven to 180 °C.
  • Cut the aubergine into thin slices lengthwise and grill the slices until slightly brown.
  • Place a slice of dried ham on top of each aubergine slice. Spread cream cheese on top. Crumble white cheese with sun-dried tomatoes over the cream cheese and roll the aubergine into a roll. Secure with a cocktail stick.
  • Crumble the breadcrumbs and put them in a bowl with the olive oil. Season with black pepper, salt, and, if desired, finely chopped herbs.
  • Place the rolls on a large baking tray greased with cooking oil or lined with parchment paper.
  • Sprinkle seasoned breadcrumbs and grated mozzarella on top of the aubergine rolls. Finish with a light drizzle of olive oil.
  • Bake in the oven for approximately 10 minutes. Then, garnish with basil leaves.
