Instructions

Apple muffins
  • Preheat the oven to 200°C (conventional oven). Line a baking tray with 10 muffin cases or grease a muffin tin.
  • Whisk butter and sugar until fluffy. Add eggs one at a time.
  • In a separate bowl, mix flour and baking powder. Gradually mix into the batter along with milk.
  • Toss apples with the extra table spoons of sugar and cinnamon. Gently fold into the batter using a spatula.
  • Distribute the batter in the muffin cases. Bake in the centre of the oven for 20-25 minutes. Use a skewer to check when they are done. Let cool completely on a wire rack.
Browned butter cream cheese frosting
  • Melt butter in a saucepan while whisking until it has browned and has a nutty aroma. Transfer to a heatproof bowl. Allow to solidify but not become fridge cold.
  • Whip browned butter, cream cheese, icing sugar, and vanilla sugar with an electric mixer until creamy. If the frosting appears to curdle, continue whisking until smooth.
  • Pipe or spread the frosting onto the cooled muffins.
Topping
  • Toast the chopped almonds and allow them to cool. Sprinkle over the frosted muffins.

Tip

You can begin by browning the butter to give it enough time to cool while the muffins bake. Keep a close eye on it as it browns; it can go from browned to burnt very quickly. Look for a golden-brown colour and a nutty aroma, then remove it from the heat immediately.
