Traditional American pumpkin pie

A long-serving American tradition is to serve up a slice of warm, tasty pumpkin pie on Thanksgiving and Halloween. With a sweet yet slightly spicy twist, it has a similar taste to gingerbread and goes down a treat. Instructions

Step 1
  • Put the flour, the sugar and the butter in a bowl and mix until it is crumbly. Add the yolk and work together to form a dough.
  • Press out in an oven-proof pie dish (about 24 cm in diameter).
  • Let it rest in the refrigerator for about 30 minutes.
Step 2
  • Preheat the oven to 200°C.
  • Boil the pumpkin in lightly salted water for 5-8 minutes. Drain the pumpkin using a sieve. Mix the pumpkin into a puree and let it cool slightly.
  • Add the eggs one at a time.
Step 3
  • Mix the rest of the ingredients into the filling and pour into the pie dish. Bake in the lower part of the oven for 40-50 minutes at 200°C
Step 4
  • Let it cool. Dust with a little icing sugar and serve with whipped cream.

Tip

Pre-bake your crust to prevent it from getting soggy and ensure it's fully cooked through when you serve your pie.

Add a little extra spice in your pie for a more rich flavour - be sure to taste it though so it's to your liking!
