American Pancakes with Fruits and Berries

Fluffy, thick and a delicious pancakes - great for dessert, brunch or for a cosy, long breakfast on days off.

Ingredients

Baking soda
2 tsp
Wheat flour
180 g
Salt
½ tsp
Caster sugar
1 tbsp
Milk
250 ml
Eggs
2
Butter
50 g
Banana
1
Frozen blueberries
100 g
Natural yoghurt
20 g
Honey or Maple syrup

Instructions

Step 1

  • Mix flour, baking powder, salt and sugar in a bowl. Add milk, eggs and butter and stir or whisk until smooth.

Step 2

  • Peel the banana and cut it into smaller pieces. Mix it, and the frozen blueberries, into the batter.

Step 3

  • Heat a frying pan on a medium heat. Melt a tablespoon of butter into the pan and fry 2-3 small pancakes at a time.

Step 4

  • When bubbles start forming on the top, it's time to turn/flip the pancakes. Cook for a further 1-2 minutes.

Step 5

  • Serve the pancakes once made with a dollop of yogurt and honey or maple syrup.
